🌰 HEARTY CHICKEN WITH CHESTNUTS & MUSHROOMS I 🌰 HEARTY CHICKEN WITH CHESTNUTS & MUSHROOMS 
INGREDIENTS
250g fresh chestnuts (or 200g frozen peeled)
8 dried shiitake mushrooms
3 tbls extra virgin olive oil
3cm-long piece of ginger, peeled and thinly sliced
1 onion, peeled, halved and cut into ¼ cm wedges
8 chicken thighs, bone in, skin on
8 chicken drumsticks, bone in, skin on
5 tbls dark soy sauce
125ml dry sherry
1 tbls caster sugar
2 pinches salt
1 whole star anise
½ tsp cracked pepper
250ml water
METHOD
Score chestnuts and place in boiling water for 5 minutes till tender. Peel to remove both skin and fine inner pellicle as soon as they’re cool enough to handle. They’ll peel better warm. Cut chestnuts in half and reserve. Soak dried mushrooms in a hot water for 30 minutes. Drain, remove stem, cut each mushroom in half and reserve. Heat oil in a large, heavy pot. When it begins to smoke add ginger and onion. Stir for 15 seconds, then add chicken thighs and drumsticks. Keep turning chicken until skin is golden, ensuring onions and ginger don’t burn. Add soy sauce, half the sherry, sugar and salt. Stir well to completely coloured the chicken. Add star anise, pepper and water, stir well. Cover, reduce heat and simmer for 15 minutes, occasionally turning the chicken. Mix in remaining sherry, chestnuts and mushrooms, cover and simmer gently for another 15 minutes. Remove from heat and let rest for 10 minutes then serve with steamed rice.

🥟 PLANT-BASED CHESTNUT DUMPLINGS 🌰 INGREDIE 🥟 PLANT-BASED CHESTNUT DUMPLINGS 🌰
INGREDIENTS
500g chestnuts, cooked and peeled*
2cm piece ginger
2 cloves garlic
1 teaspoon sesame oil
1 tablespoon oyster sauce (vegetarian option)
3 shallots, finely chopped (reserve some for garnish)
1 teaspoon cornflour
1/2 teaspoon Chinese five-spice powder
1 275g packet round dumpling wrappers (approx 30)
Soy sauce, chilli oil, black & white sesame seeds, fresh chilli and fried shallots for serving
NB: 800g of fresh chestnuts produces approximately 500g once cooked and peeled
METHOD
Place chestnuts, ginger, garlic, oyster sauce and sesame oil into a food processor. Pulse for two minutes or until the mixture starts coming together.
Add the shallots, cornflour and Chinese five-spice powder. Stir.
Lay dumpling wrappers on a board, eight at a time. Using a pastry brush dipped in water, lightly brush the edges of each wrapper.
Place a heaped teaspoon of the filling onto each wrapper and fold in half using your fingers to seal the damp edges.
Bring the two corners of the dumpling together and press to complete the dumpling.
Meanwhile, prepare a bamboo or stainless steel steamer by lining it with baking paper that has had several holes cut into it for the steam to pass through. Place steamer over boiling water.
Steam the first batch of dumplings for ten minutes, while preparing the next.
Continue until all dumplings have been made and steamed
Serve with soy sauce, black & white sesame seeds, fresh chilli, chilli oil and fried shallots. Use reserved shallots as garnish.

🌀CHESTNUT PASTRY SWIRLS 🌀 INGREDIENTS 300g 🌀CHESTNUT PASTRY SWIRLS 🌀
INGREDIENTS
300g chestnuts, cooked & peeled
250g cream cheese, softened
1 tablespoon cocoa powder
3 tablespoons brown sugar
½ teaspoon vanilla extract
1 teaspoon cinnamon
4 sheets frozen puff pastry
1 egg
1 tablespoon icing sugar
METHOD
Remove puff pastry from freezer and allow to thaw slightly at room temperature.
Preheat oven to 180° fan forced.
Place cooked chestnuts into a food processor and pulse for about one minute. Add softened cream cheese, cocoa, brown sugar, vanilla and cinnamon. Blitz to form a spreadable paste.
Lay the four sheets of puff pastry on the bench and spread chestnut mixture evenly over each one using a spatula or blunt knife. Roll each square of pastry into a log and slice discs approximately 1.5 cm thick.
Place the discs flat onto a lined baking sheet. Be careful not to overcrowd them as they will expand while baking. Brush each one with beaten egg.
Bake for approximately 15 minutes or until puff pastry has risen slightly and is golden in colour. Allow to cool slightly before dusting with icing sugar.

🌰CHESTNUT CARBONARA🌰 INGREDIENTS 500g of co 🌰CHESTNUT CARBONARA🌰
INGREDIENTS
500g of cooked and peeled chestnuts
200g chopped streaky bacon
250g tubular spaghetti
1 tablespoon good quality olive oil
3 eggs
1 cup grated Parmesan cheese
1 tablespoon freshly cracked black pepper
METHOD
Begin cooking pasta to packet directions. When it is at al dente stage, reserve ¼ cup of the pasta cooking water and set aside. Drain pasta and return to pot, adding olive oil.
Sauté bacon in a frying pan on medium heat until crispy – about five minutes. Add chestnuts to the bacon and continue stirring over medium heat.
In a separate bowl, combine eggs, Parmesan cheese and a generous pinch of cracked pepper.
Add the egg mixture to the cooked pasta and stir. Add cooking water and stir before returning to stove on medium heat.
Add half the chestnut bacon mixture and stir to combine. Continue stirring gently until sauce has thickened and pasta is warmed through.
Serve pasta on plates, topped with reserved bacon and chestnuts. Sprinkle with more cracked pepper and additional grated Parmesan.
Serve immediately.

Got some roasted chestnuts stashed in your freezer? Great, brownies are on the menu! Plus they're GLUTEN FREE!
INGREDIENTS
Standard self-raising flour can be used for a non-gluten free version.
350g cooked and peeled chestnuts
200g good quality dark chocolate, broken into squares
200g unsalted butter, chopped
1 ¼ cups brown sugar
1 tsp vanilla extract
4 eggs, lightly beaten
1/2 cup gluten-free self-raising flour
2 tbsp cocoa
Pinch salt
METHOD
Preheat oven to 180˚C or 160˚C fan-forced.  Grease and line a 16cm x 26cm x 2-3cm deep slab pan with baking paper, leaving a 2cm overhang on the sides of the pan.
Set aside 50g cooked and peeled chestnuts.  Place remaining chestnuts into a food processor.  Process until fine crumbs form (you’ll need 2 cups ground chestnuts). Set aside.
Place chocolate and butter in a large microwave safe bowl and microwave on high for 2 minutes, stirring with a metal spoon every minute until melted.  Set aside to cool.
Using a metal spoon, stir in sugar, vanilla and eggs into chocolate mixture until well combined.  Sift over flour, cocoa and salt.  Stir to combine.  Gently fold through chestnuts.  Pour into prepared pan. Chop reserved chestnuts and sprinkle over mixture. 
Bake for 25-30 minutes until a skewer inserted comes out with moist crumbs sticking.  Cool completely in the pan.  Cut into squares.  Serve with whipped cream and a dusting of cocoa if liked.

Could hummus possibly get any tastier? Apparently so. Just add chestnuts!
INGREDIENTS
500g cooked and peeled chestnuts, roughly chopped
1-2 garlic cloves, roughly chopped
1⁄3 cup lemon juice
1⁄4 cup tahini
1 tsp ground cumin
1⁄4 cup olive oil
1⁄2 cup hot water*
1⁄2 tsp salt
METHOD
Combine chestnuts, garlic, lemon juice, tahini, cumin, oil, hot water and salt in a food processor. Process until almost smooth.
To serve, spoon into a serving bowl, drizzle with a little extra virgin olive oil, sprinkle with pepper and serve with lavosh or grilled flatbread and cucumber slices.
*Add extra hot water for a smoother and thinner consistency.
